Organic and vegetarian meals at Ecolonie

Every day, we offer delicious vegetarian and organic meals, prepared as much as possible with fresh vegetables from our own garden or local products. We aim to create nourishing, varied, responsible, and affordable meals for everyone.

Our meals are made from products directly sourced from the land: seasonal vegetables grown in our gardens, cheese and yogurt made from the milk of our own goats, which we milk and process in our own dairy. We also make our own paneer from goat's milk. The bread we serve comes from our own bakery, where we carefully bake wholegrain and sourdough bread.

In composing our meals, we strive to find a balance between nutrition, variety, and sustainability. Our dishes are simple but prepared with great care, offering a responsible choice for those who wish to eat mindfully. Additionally, we ensure that the meals remain affordable so everyone can enjoy the best the season has to offer.

If you have not booked full board for your stay, you can still sign up for meals. You can do this daily, before 11:00 AM.

What you can expect for each meal:

Breakfast

  • Coffee and herbal tea.
  • Yeast bread, sourdough bread, and various toppings.
  • Yogurt and muesli.
  • Two times a week, an egg.
  • A croissant on Sundays.

Lunch

  • Yeast bread, sourdough bread, and various toppings. Sometimes special bread like focaccia or raisin rolls.
  • Soup and different salads with various dressings.
  • Occasionally a hot dish.

Dinner

A different menu each day: a varied buffet where you can serve yourself as you wish. Accompanied by a simple dessert.

Do you follow a special diet?

We can accommodate certain dietary preferences in our meal preparation. To better meet the requests we receive, we have made some adjustments to our dietary options.

Lactose-free & low-gluten diet

As of now, we offer a lactose-free and low-gluten diet:

  • Lactose-free: Cow's milk and goat's milk are replaced with plant-based alternatives. Cheese and paneer are substituted with options like soy, tofu, and nutritional yeast.
  • Low-gluten: Instead of pasta, couscous, and seitan, we use gluten-free pasta, quinoa, tofu, or soy products. Sauces and similar dishes are made with gluten-free flour, such as buckwheat flour. However, we cannot guarantee a completely gluten-free environment, as the meals are not prepared in a separate kitchen or with dedicated cookware. Therefore, we refer to it as low-gluten rather than gluten-free.

These alternatives apply to the evening meal only. During breakfast and lunch, you are free to choose from the available options.

Additional dietary information

  • We use very little sugar in our main meals. If a dish requires sweetening (which is rare), we use natural alternatives like agave syrup or date syrup. This does not apply to desserts.
  • At lunch, we offer cheese, peanut butter, and tahini, as well as various types of syrup, such as apple syrup, barley malt syrup, date syrup, and apple-pear syrup.
